Trouble is Arthur Fèvre's second project in Orthez, in the Béarn. It is not wine: it is pétillants made from flowers picked by hand in the Pyrénées-Atlantiques, according to the season, in 50 cl bottles.
Each one contains only water, a flower, a citrus fruit and ginger: elderflower with lemon, magnolia with grapefruit and chestnut flower with lime. They ferment with the yeasts and bacteria of the flowers themselves; the little beet sugar added at the start is eaten by the fermentation, and the bubbles form in the bottle. They finish dry and under 1 % alcohol.
