Clément Perseval returned in 2010 to Chamery, a Premier Cru village on the north slope of the Montagne de Reims, after studying in Avize and spending a couple of years on an organic estate in Pouilly-Fuissé. The family vines, about three hectares in six plots, were taken over and the champagnes began to be signed with the name Clément Perseval.
The soil has been worked with a horse since 2014 and chemicals are not used systematically. In the cellar, indigenous yeasts are used and no sugar is added: the dosage comes from the sugar left over from the fermentation itself. Premier Cru champagnes from Chardonnay, Pinot Noir and Meunier come out, with plot and vintage cuvées.
