Chavost is a cooperative of growers in Chavot-Courcourt, south of Épernay, founded in 1946, which today brings together more than a hundred growers with more than 70 hectares around the village. In 2019, its new chef de caves, Fabian Daviaux, at the age of 30, convinced the members to devote 5,5 hectares of organic and biodynamic vines to a range of champagnes with nothing added.
Chardonnay on chalk soils and Meunier on clay-limestone. They ferment with indigenous yeasts and bacteria, without chaptalising or acidifying, with long ageing on lees. All are brut nature and vintage, with no added sulphites, unfiltered and unfined.
