Lili and Nico Desdouit founded La Sauvagère in 2021 in Candes-Saint-Martin, where the Vienne joins the Loire. They farm about five hectares spread between Candes, Beaumont-en-Véron, in Chinon, and Saint-Aignan-sur-Cher, in Touraine, on calcareous tuff, flint and sands.
Besides Cabernet Franc, they work Loire grapes that the market has pushed aside: Grolleau, Gamay, Côt, Pineau d'Aunis, Menu Pineau. They farm organically, harvest by hand and ferment with indigenous yeasts, with no additives, unfined and unfiltered, with low or no sulphites.
