One Sunday in 2019, grower Oriol Roig refused to sell his Xarel·lo Vermell cheaply and called his friends Laia Esmel, a winemaker, and Jaume Vilaseca, a photographer. The three of them harvested and fermented the grapes in the most direct way. That ancestral became Dumenge.
Today they work three vineyards in the Alt Penedès on clay and limestone: seventy-year-old Xarel·lo facing Montserrat, Xarel·lo Vermell in Sant Jaume Sesoliveres and Sumoll in Espiells. Hand harvest, native yeasts and bottling before fermentation ends, without disgorging, fining or filtering and with nothing added.
