Ferran Lacruz works eight hectares in Sant Martí Sarroca, in the Alt Penedès, on calcareous soils with marl and gravel. Since the first vintage, in 2018, Ferran has championed Xarel·lo as a still-wine grape, and does so outside the D.O., free of rules that do not suit the project. Hence the name and the titles of the wines.
Farms organically and harvests by hand and early, to keep acidity. Each plot ferments separately with wild yeasts in stainless steel, used barrel, amphora or clay jar. No additives, no added sulphites and unfiltered.
