Behind a wooden door in the centre of Sant Sadurní d'Anoia there is an underground cava cellar with room for about three thousand cases. Joan Colet Rius set up the winery in 1995 with Joan's father and the family's grapes; today it is run by Joan's son Jaume Colet Romero, the third generation.
The family vineyards of the Alt Penedès are farmed organically and harvested by hand. They make single-vintage cavas with long ageing, riddling and disgorging by hand, bottle by bottle, almost always brut nature. Jaume is also one of the founders of the Vida Penedès collective.
