The brothers Carlos and Juan Rodríguez and winemaker Fredi Torres founded Sílice in 2013 in Amandi, in Ribeira Sacra, reclaiming almost vertical terraces above the Sil canyon, with vines from twenty to over a hundred years old on slate and schist. They work outside the D.O. to have freedom in vineyard and cellar.
They farm organically with biodynamic practices and harvest in baskets, by hand. They vinify plot by plot with native yeasts, macerating some whites on their skins, and age in foudres and old barrels before bottling with minimal sulphites.
