Four growers from Burgos, Cebreros and Segovia reviving old vines and almost forgotten varieties.
In Cebreros, Chatô Gañan looks after century-old vines of Garnacha, Albillo Real and Morenillo on granite, in the Sierra de Gredos. César Fernández works co-planted vines of Tinto Fino, Bobal and Albillo in Burgos. In Cuéllar, Malaparte has farmed organically and biodynamically since 1996, with Tempranillo, Verdejo or Albillo Mayor. Raúl Moreno & Malaparte makes Viura and Listán Negro between Segovia and Tenerife.
