César Fernández grew up among the family vines in Fuentelcésped, in the Ribera Burgalesa. César studied viticulture and worked in Gredos, Ribeira Sacra and New Zealand before returning to the village. Today about three hectares of old vines are tended, some of them centenarians, at 870 metres on calcareous soils with pebbles.
The plots are co-planted the old way: Tinto Fino, Listán Prieto, Bastardo, Bobal and Albillo in the same vineyard, and they are vinified that way, together. Organic and biodynamic farming, hand harvest, fermentation with indigenous yeasts and ageing in used oak, with no corrections and minimal sulphites. Austere wines, with acidity, far from new-oak Ribera.
