In the mid-1990s, Mariano de Frutos replanted the family's ancestral vines in Cuéllar, in the Tierra de Pinares of Segovia, where vines had almost disappeared. Today the winery is run by Mariano's daughter Elisa de Frutos and Rubén Salamanca, with about 3,5 hectares on sand at 850 metres.
They farm organically, with biodynamic preparations since 2020, and vinify each variety and plot separately. They use old barrels, clay jars and oxidative ageing in demijohns, with indigenous yeasts and minimal or no sulphites. They are members of Triple A.
