Jaime de Carvajal spent almost twenty-five years at González Byass, as export director, before registering a house of Jaime's own in Jerez in 2014, with two children. There is no vineyard or ageing cellar: the sherry is tasted cask by cask in bodegas of the Marco and the soleras to bottle under the Carvajal name are chosen.
The sherries are bottled en rama by Delgado Zuleta, in Sanlúcar de Barrameda: unfiltered and unfined, just as they come out of the cask. There is manzanilla aged under flor, amontillado with biological and then oxidative ageing, oloroso with oxidative ageing and a Palomino medium with Pedro Ximénez.
