Gratias was born in 2007 in Casas Ibáñez, in the Manchuela, when two couples of winemakers, Iván and Ana, and José and Silvia, filled a barrel with grapes from an old Bobal vineyard of Iván's father. The first harvest came in 2009. Since then they have been reviving almost lost varieties, such as Pintaillo and Tardana, which neighbours had already swapped for more commercial ones.
The plots, bush-trained and dry-farmed between 600 and 1.000 metres, sit on limestone, sandy and clay soils that are vinified separately. They farm organically and ferment with native yeasts in clay jars or small tanks, with no additives or corrections. They also make pet-nats.
