Romain De Moor, son of Alice and Olivier De Moor, of Courgis, and Mélissa Bazin, who comes from the Ardèche, met doing internships in the Jura: she with Julien Labet, he with Jean-François Ganevat. In 2020 they created La Petite Empreinte, “the small footprint”, with a little over two hectares in Saint-Bris-le-Vineux and Courgis, near Chablis.
The two of them do all the work, with no employees. The vineyards are organic, converting to biodynamic, with cover crops and fruit trees. They ferment with native yeasts, often as whole bunches, and age in old barrels with no added sulphites, unfiltered and unfined. Pinot Noir, Gamay and Sauvignon.
