Julien Baudouin learned the trade with Christophe Pueyo and in 2023 set up his own chai in the French Basque Country, between Lahonce and Bayonne. There is no vineyard: grapes are bought from organic growers along the coast, from Iparralde to the south of the Landes.
Works with Gros Manseng, Ugni Blanc, Cabernet Sauvignon and other local grapes. Ferments with indigenous yeasts, no additives or corrections; macerates the reds briefly and presses the whites gently, ages briefly in used barrel or stainless steel and bottles as Vin de France, with low or no sulphites.
