In 2018, Aitor Irazu and cousin Jon Estebanez found Sorgintxulo, three hectares of ungrafted Hondarribi Zuri that had been abandoned for five years in Aia, next to Getaria. They spent two years clearing them by hand and in 2021 made the first harvest. Makatzak means “wild apples” in Basque.
They farm organically and biodynamically, harvest by hand and ferment with indigenous yeasts in stainless steel. The wines age between 8 and 16 months on fine lees, some in used barrel, and are bottled unfined and unfiltered, with under 10 mg/L of sulphites. The result is txakolis with Atlantic tension and salinity.
