Eloi Cedó, from Tivissa, went through the Priorat and Chile before settling in Felanitx, in Mallorca, where in 2010 Sistema Vinari began almost as a game, with grapes the neighbours gave away. The first bottled vintage, in 2012, was Château Paquita, made with those 4 kilos.
Works Mallorcan varieties that were close to being lost —Callet, Manto Negro, Escursac, Fogoneu, Premsal— from vines 40 to 50 years old, bush-trained on Call Vermell. Farms organically, ferments with native yeasts, uses carbonic maceration for part of the reds and ages in old barrel, with no added sulphites, unfined and unfiltered.
