Cati Ribot is the third generation of a family from Santa Margalida, in north-east Mallorca. After studying sommellerie in Barcelona, since 2006 Cati has been replanting almost vanished island varieties together with the family: Escursac, Malvasía de Banyalbufar, Giró Ros, Prensal Blanc.
The Son Llebre estate has 13,5 hectares on Call Vermell, organic since 2012 and biodynamic since 2014, with Mallorcan sheep as winter cover. In 2019 it dropped sulphites and Ve d'Avior was born. Each plot is vinified separately, with native yeasts, as carbonic, with skins or in ancestral style, unfined and unfiltered.
